Doves and chocolate eggs? Not only. In our country, Easter is celebrated, especially, by eating a big cookie with hard boiled eggs on it held steady with two crossed strips. Beyond this, over time, our dessert has taken on different forms: doves, rabbits, stars, hearts, roosters.
This is how scarcella is made, or scariella or scarcedda, the Apulian Easter cake and symbol of liberation from original sin. In fact, before eating it, the eggs must be freed from the intertwining of pasta.
Do you want to cook the scarcedda with me? It’s easy.
Here are the ingredients for 6-8 people:
- 500 gr of flour
- 200 gr of sugar
- 100 gr of extra virgin olive oil
- 2 whole eggs
- 3 hard-boiled eggs
- 8 gr of ammonia
- grated rind of a lemon
- colored candies
Sift the flour and put in the middle the eggs and sugar, oil, ammonia and lemon zest. Mix everything until you get a homogeneous dough (if it is too hard, add a little milk).
After letting it rest, roll out the dough and cut it according to the shape you prefer. Place boiled eggs on top and stop them with two cross-shaped strips. Sprinkle with beaten egg and colored sugared almonds.
Bake at 190°C for about 25/30 minutes.
